Method

  • step 1

    Heat a medium-sized saucepan on medium heat and add in the vegetable oil, minced garlic, red Thai curry paste, soy sauce, and peanut butter. Stir and fry for 30 secs, then stir in the coconut milk and chicken stock.

    Stir until smooth and bring to the boil. Then reduce to simmer.

  • step 3

    Taste for seasoning. Then add in the frozen dumplings and cook according to packet instructions, about 4-6 mins.

  • step 4

    Once your dumplings are cooked, divide between two bowls and garnish with freshly chopped coriander, lime wedges and chilli oil.
